    Broccoli + Bacon

    Tangy_Broccoli_SaladRefuse to eat broccoli? How about I add some bacon? I love broccoli, but knowing that a lot of people don’t share my little love affair, I thought I would post this recipe, because this salad is good. Seriously good. In fact, I took one bite and said “Whoa, this is good.”

    But seriously, bacon? Surely that can’t be good for you. Well, as it turns out, a little bacon, when bought responsibly (think organic, humanely raised), actually isn’t so bad. Happy pig = healthy bacon. Yes bacon has lard, which is a scary word, but it shouldn’t be. Why?

    • Lard is high in Omega-3 fatty acids, which are your friend in brain, heart and overall health
    • Bacon is packed with protein – which helps balance unbalanced blood sugar (the real culprit in weight gain)

    So pig out a little.

    BROCCOLI + BACON SALAD

    • 2 cups broccoli florets, cut small
    • 1/2 cup green onions
    • 2 cups red or green grapes, halved
    • 1/2 cup pumpkin seeds/pepitas (or your favorite nut/seed)
    • 3/4 cup cooked and crumbled organic bacon
    • Handful of raisins (optional)
    DRESSING:
    • 1 cup plain, organic, whole milk yogurt (or coconut yogurt for dairy-free)
    • 1/3 cup honey
    • 1 Tbsp. apple cider vinegar
    Mix dressing in with broccoli mix…then crumble the bacon on top right before serving.  Refrigerate before serving.
